In a 2 qt bowl, mix dry ingredients.
Make a well, using wooden spoon stir in water until ball forms.
Sprinkle with olive oil.
Cover let rise until double.
On floured parchment, turn dough out and shape into ball adding more flour to handle.
May add cheese, peppers, and apples at this stage and knead in.
Place dough with parchment paper back into bowl, cover, let rise 30 minutes.
Place 2 qt pot with lid in oven and heat to 450 degrees.
Once second rise is done, remove pot from oven and place dough and parchment in hot pot, cover with lid and into oven for 35 min.
Remove pot, remove lid and back in oven for 15 minutes.
